A rare variation on Colombian bourbon, this spicy-sweet “aji” lot is named for the color of the cherries, which resemble a chili pepper. They’ve been fermented in cherry, washed, and slow dried, resulting in notes of toffee and brown sugar that’ll blow your mind. Great for the well defined specialty palette and the novice coffee drinker alike.

Aldemar’s 3-hectare farm sits in the Colombia township of La Esperanza, though his home, wet mill, and dryer are in the nearby township of Cabeceras. He is a part of "Los Guacharos," a group of independent, quality-focused small producers in Bruselas, Southern Huila, Colombia. Together they're collectively converting to fully organic agriculture.
