Pink Bourbon (pronounced bur-BONE) is a carefully cultivated and highly sensitive hybrid variety known for its striking pink cherries and sweet, complex flavor. It’s pretty special that we were able to score this one from Ana Nelly, and it won’t be around for long!

    A Coffee That Keeps Getting Better

    I was really excited to try Onda and include it in my monthly deep dive into specialty coffee roasters in Seattle. I opted for the lightest roast they offer since I mostly drink light roasts, and I’m glad I did. This precious coffee is roasted lightly, so I gave it 10 days of rest before brewing. It was fantastic—very sweet with notes of milk chocolate, strawberry, and florals. At two weeks off roast, it only got better, with the floral notes becoming more pronounced. It’s a delicate and clean cup with more sweetness than acidity, making it a versatile choice for any occasion. So far, I’m really impressed by Onda and will definitely come back for more.
